Ingredients for Gravy:
1 medium Onion sliced
2 large Tomatoes chopped
15 pcs Cashews
Ginger 2” pc sliced
Garlic 5 cloves
4 Kashmiri chilies
1 tsp Cumin seeds
1 tbsp Coriander powder
1 tsp Turmeric powder
2 Bay leaves
1 Cinnamon stick
1 Star anise
3 Cloves
7 Black pepper corns
2 Cardamom
100 grams Butter
Salt to taste
1 tbsp Kasuri Methi
1 tbsp Sugar
Coriander leaves for Garnishing
Cream for topping
Ingredients for Chicken Tikka
Chicken 850 grams approximately
Boneless or with bones
Oil 3 tbsps
1 tbsp Shan Tikka Masala
1 tbsp Shan Tandoori Masala
1 tbsp Garlic
1 tbsp Ginger
1 lemon (juice)
Yoghurt 2 tbsp
Method for Chicken Tikka
Take a big bowl , add oil and add the tikka & tandoori masala & add the chicken , then add ginger, garlic, yoghurt & lemon juice and keep the marinated chicken for atleast 20 min.
Heat a pan, add oil and add the marinated chicken & cook on high flame till the chicken is almost done, you don’t need to cook it completely as it will still cook in the gravy.
If you cook on slow heat the chicken will get boiled and not grilled. The timings depend on the kind of chicken pieces you have selected, boneless or with bones.
Please note you can use any brand of tikka & Tandoori masala but I use Shan masala or you can even make home made masala with Kashmiri chilly, Mango powder, Cumin seeds , Coriander seeds, turmeric powder, Ajwain seeds , Garam Masala & salt.
Method for Gravy
In a pan , add about 500ml water and add all the ingredients except the sugar and methi. Cover and cook on low flame for at least 15 minutes till the tomatoes are all soft and mushy. Let it cool , remove the cinnamon stick and the bay leaves and blend the rest of the mixture and then sieve it to make a creamy sauce.
Heat the same pan , add butter , add strips of ginger and chopped green chili (optional) add the gravy, add water to get the desired consistency of the gravy , now add the sugar and Kasuri methi. Let it simmer.
Add the chicken to the gravy and cook for a few minutes till chicken is done.
At this point add cream and garnish it with coriander leaves.
Serve it with Naan or Parathas
